Gluten-Free Brookie Pie (Brownie + Cookie in One!)

 
 
 

If you’re like me and can never decide between a warm brownie or a soft-baked cookie — this recipe is your perfect solution. This gluten-free brookie pie combines the best of both worlds into one delicious, easy-to-make dessert. It’s naturally gluten-free thanks to almond flour, oat flour, and simple ingredients you probably already have in your pantry.

Whether you serve it fresh out of the oven or let it cool for those perfectly clean slices, this is one of those desserts that always disappears quickly in my house!

Ingredients:

Brownie layer:

1 cup almond butter

⅓ cup maple syrup

¼ cup coconut sugar

¼ cup cocoa powder

1 egg

½ tsp baking soda

¼ tsp salt

Cookie layer:

1 ½ cup almond flour

½ cup oat flour

1 egg

½ cup olive oil

½ cup coconut sugar or brown sugar

1 tsp vanilla extract

1 tsp baking soda

¼ tsp salt

⅓ cup chocolate chips

Instructions:

Preheat oven to 350F

Start by making the brownie layer. In a medium bowl, whisk together the egg, almond butter, maple syrup and coconut sugar.

Stir in the cocoa powder, baking soda and salt. Mix until the batter is smooth.

Spread the brownie into a greased or parchment lined 9 inch pie dish of 11x7 inch baking dish. Set aside.

Rinse out the bowl and prepare to make the cookie layer. Whisk the egg, olive oil, coconut sugar and vanilla extract until combined.

Add in almond flour, oat flour, baking soda, salt and chocolate chips. Mix well. Spread the cookie layer evenly over the prepared brownie layer. Press down evenly.

Bake for 30-35 minutes until the top is golden brown. For a more gooey texture, reduce bake time to 25-30 minutes.

Allow to cool completely before slicing and enjoy!
