Fudgy Pumpkin Bread (Gluten-Free & Naturally Sweetened)
Fudgy Pumpkin Bread (Gluten-Free & Naturally Sweetened)
There’s something about pumpkin recipes that just feel cozy and perfect no matter the season. This fudgy pumpkin bread has become one of my go-to bakes — it’s super easy to make, perfectly moist, and naturally sweetened with maple syrup. Plus, it’s made with blended oats instead of traditional flour, so it’s gluten-free and a little more nutrient-dense.
Whether you’re making it as a snack, a healthier dessert, or something to enjoy with your morning coffee, this pumpkin bread is always a hit (especially with the chocolate chips on top!).
Ingredients:
1 cup pumpkin puree
2 eggs
½ cup maple syrup
⅓ cup olive oil
1 tsp grated ginger
1 tbsp cinnamon
1 tsp pumpkin pie spice
1 tsp baking powder
Salt
1 ½ cups blended oats
½ cup dark chocolate chips
Instructions:
Preheat oven to 350F
Mix all ingredients together in a bowl
Pour into a greased baking tray and top with extra chocolate chips
Bake for 35 minutes and enjoy!
Why I Love This Recipe
I love recipes that feel indulgent but are secretly packed with nourishing ingredients. The pumpkin puree keeps this bread super moist, the oats give it great texture, and the maple syrup adds just the right amount of sweetness. Plus, everything comes together in one bowl — so it’s easy to prep even on busy days.
Whether you enjoy it warm out of the oven or save it for later, this fudgy pumpkin bread always hits the spot!
