Ingredients:
1 ½ cups almond flour
1 cup oat flour
1 cup pumpkin puree
¾ cup coconut sugar
⅓ cup coconut oil
1 egg
1 tbsp pumpkin pie spice
1 tsp vanilla extract
1 tsp baking powder
¼ tsp salt
½ cup white chocolate chips
Instructions:
Preheat oven to 350°F (175°C).
In a bowl, mix together the egg, pumpkin puree, coconut oil, coconut sugar, pumpkin pie spice, and vanilla until smooth.
Add almond flour, oat flour, baking powder, and salt. Stir until fully combined.
Gently fold in the white chocolate chips.
Spread the batter into a parchment-lined 10x7 baking dish. Sprinkle extra white chocolate chips on top.
Bake for 30 minutes, until edges are golden brown and the top is set.
Let cool for 20 minutes before slicing into squares.
