Cookie Dough No-Bake Protein Bites
Easy no-bake protein bites with cashew butter, protein powder, and sprinkles.
I love a high-protein treat that’s easy to make, requires no baking, and that everyone in my house will actually eat. These no-bake protein bites come together in minutes, are packed with protein and healthy fats, and are perfect for a quick snack or lunchbox treat. Bonus: the sprinkles make them extra fun for kids!
Ingredients:
1 cup cashew butter
⅓ cup maple syrup
2 tsp vanilla extract
½ tsp almond extract
⅔ cup almond flour
1 scoop protein powder
½ cup flaxseed meal
½ bar dark chocolate, chopped
Sprinkles for rolling
Instructions:
Mix Cashew butter, maple syrup, vanilla extract and almond extract in a bowl.
Add almond flour, protein powder and flaxseed meal. Mix all together with a spatula
Fold in chocolate pieces.
Roll mixture into balls and roll each into sprinkles placing on a parchment lined baking sheet
Put in freezer for 30 minutes

Notes & Substitutions:
Swap cashew butter for almond or peanut butter.
Use any protein powder you love (vanilla works well).
Store in the fridge or freezer for grab-and-go snacks.
